Raw Vegan Cheesecake, yes….It’s real food and it’s definitely one of my most favorites creations ever. I was inspired by a few different recipes and took little bits of their ingredient list, instructions, and toppings and created my own. The three different recipes I used as reference are here, here, and here. Now I know what you all might be thinking, isn’t she a lifestyle and wedding photographer? Why is she blogging so much about food? Well…..if you know anything about me, you know I LOVE food and fitness. Creating healthy recipes, reading, writing, yoga, beach exploring and more. It feels only necessary for me to share it all with you guys! Plus!, thanksgiving is this week and I thought it would only be necessary to post a few more food posts since we all had lots of cooking, baking, eating and lounging around to do these next few days 🙂
I made this cheesecake last thanksgiving and it was so delicious that I am temped to re-create it again this year so I thought I would share in case you guys wanted to make a mess of your kitchen and surprise your friends and family too 🙂
WARNING: I repeat, warning…this is NOT a cheap recipe…at all. So if you are going to experiment, experiment correctly and efficiently. Between the cashews, dates, almonds, and more…it’s pretty pricy! But if you want to splurge, it’s totally worth it. Anyways, back to the recipe! If you take a look at the links I directed you to in the first paragraph, you will see how this cheesecake it created by three different layers. I had made my bottom and middle “cheesecake” layer the day before thanksgiving and did the final top layer the day of and left it in the freezer until about 30 minutes to an hour before serving time.
Honestly, this recipe is heavenly. Yes, it is raw and vegan but if you are unfamiliar with those words…don’t let them scare you off. That doesn’t make it scary or not delicious. Give this recipe a try next time ya get a raise…just kidding….or some bonus money for the holidays. You won’t regret it ! 🙂 🙂
